She gave us her cleverly named It’s Easy Being Green smoothie fromThe Complete Idiot’s Guide to Plant-Based Nutrition. With 20 grams of fiber and 11 grams of protein, it packs a healthy punch and can be substituted for breakfast or lunch to take on the go.
It’s Easy Being Green Smoothie
4 cups green leafy vegetables (a combination of any: spinach, dandelion greens, collard greens, kale, etc.)
2 tbsp hempseeds, flax seeds, or both
1 cup frozen blueberries
1/4 cup frozen cherries
1/4 cup frozen raspberries
1/4 cup frozen pineapple
1/4 cup frozen mango
1 frozen banana
2 cups unsweetened almond milk, coconut water, or cooled green tea
Blend on high and enjoy icy cold!
